A Small Background on Cocoa Beans Cocoa beans become chocolate, but how? Cocoa beans are harvested from the bean plant and transported to a cocoa bean facility. Machines crack the beans open, and fans blow the shells of the beans away. After this, the only thing left are pure cocoa pieces called cocoa nibs. Next, the cocoa beans are roasted for about 35 minutes. Then, the cocoa beans are winnowed. After this process, the cocoa nibs are ground into a paste called chocolate liquor. The chocolate liquor is hardened and cooled. Then, the chocolate is carved and broken into the size the manufacturers want it to be. The chocolate is packaged and then licensed to stores to sell.
